Despite being a quintessential French pastry, the iconic croissant actually originated in Austria as the "kipferl," a denser, crescent-shaped roll. It only became the flaky treat we know today after French bakers perfected it.
The legend traces the kipferl back to 17th-century Vienna, said to commemorate the lifting of the Ottoman siege, with its shape mimicking the crescent on the Ottoman flag. While Marie Antoinette is often credited with introducing it to France, the the pastry only evolved into the light, buttery, laminated delight we recognize in the early 20th century. French bakers applied their unique dough-folding techniques, transforming the simple kipferl into a global symbol of their culinary artistry.
